Food Hygiene and Safety

EU Regulation 852/2004 hygiene for food requires food businesses to make sure that any staff who handle food are supervised, instructed and trained in food hygiene appropriately for the level of the work that they carry out. When you’re done

You’ll have an in-depth understanding of a wide range of key safety issues regarding food and what we can do to minimise or eliminate risks. Fundamental areas in food safety are covered, such as outlining the three main types of food safety hazards, their source and how you control them. You’ll know the correct temperatures needed for storing different products, handling practices including those involved in production through to delivery and sale as well as what common pests pose the biggest risks and how to eliminate them.

  • An overview of Food Safety Level 2

Our first module provides an overview of the subject and the course, breaking the module down logically into easily navigated steps. It tells us why food hygiene and safety is so important and outlines the challenges we face in it today.

  • Microbiological threats

This module focusses on providing a fundamental understanding on why our food is it risk from microbiological threats and how they develop. Providing information on why microbes flourish under certain conditions and precisely what triggers them, this modules seeks to further one’s understanding of why our food’s number one enemy are microbes.

  • Controlling contamination and food poisoning

Prevention is always the best approach to take when dealing with contamination and food poisoning and controlling these risks is paramount to food hygiene and safety. Understanding how things come to become contaminated and how to prevent them is the biggest step we can take in eliminating the risk of foodborne illness.

  • Hazard analysis and critical control points (HACCP)

It is regulatory for businesses to provide a food safety management system that is based on this standardised reference for hazard analysis and control. Through identifying specific hazards and measuring their effects, systems can be put in place to ensure the safe handling of food for consumers. This module provides an understanding of why this regulation exists and how it functions practically in the workplace, as well as what roles we have in it as employees or employers.

This modules focusses on how you practically implement good housekeeping in a food handling environment to ensure maximum safety.

  • Cleaning, disinfection and personal hygiene

This module focusses on the regulations that surround cleaning and personal hygiene in areas like hand washing or disinfection.

  • Banishing pests from the kitchen

Ensuring a sterile environment where food is handled in kept is vital for overall hygiene and safety and an enormous part of that is pest preventing. This module addresses the need to banish pests from kitchens and areas of food manufacture.

Certificate

When you have successfully completed the course, you will receive a HABC accredited certificate. The certificates are of course genuine and high-quality, including the accreditor’s logo and seal. Your certificate should be displayed in the workplace or kept with your CV to showcase the appropriate training has taken place.
